Grilled Orange Chicken

Next to traveling the country with your family, there is nothing more exciting than knowing you're going to fill their tummies with healthy food, made in your own teeny-tiny kitchen. 


I have a feeling there may be a few, "getting used to cooking this way" meals that the family just smiles through, but that's all a part of the experience. (right)? However, most websites and blogs state that you can make anything in an RV kitchen, just like at home. We'll see...... ;)





2 tablespoons chopped orange


1/4 cup orange juice


1/4 cup olive oil



2 teaspoons lime juice

3 garlic cloves minced

1 teaspoon thyme

1 teaspoon dried oregano

1 teaspoon ground cumin

1 lb boneless skinless chicken breasts, cut into 1/4-inch strips

1. Combine all ingredients except the chicken in a resealable plastic bag.

2. Add chicken to the bag and turn to coat. 

3. Seal and/or cover and refrigerate for 1 hour. 

4. Drain and discard marinade and thread meat onto metal or soaked wooden skewers. 

5. Grill uncovered, over medium-hot heat for 6-8 minutes or until juices run clear. 

6. Serve with your favorite side salad or mixed veggies.
